Having plenty of room to naturally root and forage and with access to
natural feed makes pigs happy.
It’s this way of life that brings out the intense and balanced taste, texture and eating quality of our magnificent pork.
All of our bacon is then traditionally dry cured and traditionally true smoked. What’s the difference between dry curing and wet curing?In a word – flavour!
Dry-cured bacon is rubbed with a mixture of salt and sugar in various proportions and they are given time to cure the meat.
It’s a slower and more labour intensive process but it results in a drier finish and fuller, more pronounced flavour.
Our sausages are hand produced and have a minimum 85% meat content with casing that consists of only naturally occurring collagen .
Natural casings breathe, allowing smoking and cooking flavours to permeate the casing and infuse the meat, giving the sausage a rich, even flavour throughout.
This is the way bacon was cured and sausages were made before it
become an industrial process. You’re guaranteed to love your
traditional Pipal Tree breakfast.
ORGANIC FRUITS, VEGETABLES AND SALADS
Chi foods source all organically grown produce from carefully selected farmers that genuinely care about quality and ethics.
The potatoes and carrots have that full flavour, often missing with conventional modern produce. Their mixed vegetables appear in the curries and Sunday Roasts. Fruits are carefully sourced for peak quality in, ripeness, fragrance and seasonality so the fresh fruit salad is a must. They specialise in sourcing a unique and delicious Class 1 Acai fruit from the Amazon, an anti-oxidant rich longevity berry that make a special appearance in the fruit Lassi’s and smoothies. All salads and garnishes are crisp and crunchy.
Where possible, their produce is sourced from local growers in the Bristol, Bath and the local area as well as mainland UK. This ensures maximum nutritional integrity.
When we import, we go to France and Spain to fill seasonal gaps.
Chi Foods work efficiently and closely with our growers to ensure produce is at it’s freshest and best with minimal storage time and transport. Chi sources fresh produce daily.
